Bees go into full production mode during warm weather when the colony can house as many as 80,000 bees during the busy flowering season. Honey season ends in autumn but, in another hand next season is starting. Summer’s end is also the beginning of a new cycle for bees.
The number of beekeepers in Croatia constantly growing. This is probably one of the most successful parts of Croatian agriculture. Currently there is more than 9000 beekeepers with half a million hives. Most countries struggle to produce enough honey for the local market. As they experience shortage of bees and fears that Europe’s bee population could be wiped out in just over a decade.

In Croatia, people used to produce honey from mixed flowers, chestnut flower, acacia, linden or honeydew. Along the Croatian coast, exotic types of honey like lavender and rosemary can be found too. Acacia honey is one that comes from the nectar of acacia trees and is the most used honey in Croatia. It is a light colored or clear honey, and has a mild but sweet taste. Acacia honey rarely crystallizes because of its high fructose content but low in sucrose. This makes it a better choice for people sensitive to sugar.
